10 MINUTE CRUNCHY NOODLE LUNCH | FOOD | RECIPE


This is my favourite lunch/quick meal! It only contains 4 ingredients and requires very little effort - yet tastes amazing. It goes well as a side-dish to steamed salmon, hoisin duck, teriyaki chicken etc. or as i prefer to eat it - by itself as an easy vegetarian snack. This was my go-to meal throughout college, i ate this almost daily haha :)


So let's get cooking! 


  • A handful of bean sprouts 
  • Half a handful of chopped spring onion
  • Cooked rice noodles
  • "Chinese five spice" or salt/pepper to season
  • A pot, wok or frying pan with a lid
  • frying oil of your choice 
Start with pre-boiling some rice noodles, leave them on the side for later 
on in the cooking.


Here i'm frying the bean sprouts, chinese five spice and the
chopped spring onion. Using a small amount of sunflower oil on a medium to low heat.
Pop the lid on and cook until the spring onions are cooked & bean sprouts are wilted/slightly
translucent. 


Turn off the heat and pop the rice noodles back into the pot,
take a fork and toss the veggies upwards mixing it all 
together.


And that is it - Finished - Tuck in and enjoy :)
